The state is also known for its jonnycakes. As in colonial times, johnny cakes are made with corn meal and water, and pan fried much like pancakes. During fairs and carnivals, Rhode Islanders enjoy dough boys, plate-sized disks of deep fried dough sprinkled with cinnamon and sugar. While these are known as zeppolas in other states, such as New York, in Rhode Island zeppolas or zeppolis are completely different. Traditionally eaten on Saint Joseph's Day , St. Joseph's Day zeppolis are doughnut-like pastries with exposed centers of vanilla pudding or riccota cream, topped with a cherry.
