  • Make Your Own Chocolate Truffles
    • I make truffles and get five dollars a dozen for them. What is it about a truffle? Why does one chocolate roll your eyes and make you moan, while another just gets eaten with little ado?I had no idea why the truffle orders kept pouring in, until the day before Christmas. I use my husband as my guinea pig to keep my waistline down. (You should see his!) I had an extra truffle, and it 'fell' in my mouth. OH! Oh my! ooooh. I understood!Truffles are fiddly, but not difficult to make. The method for most is pretty basic, heat cream (2/3 of a cup) , add chocolate (8oz) and maybe some grand marnier, frangelico or any other that you enjoy (3 tbsp and reduce cream to about 1/2 cup) , then stick it in the fridge. When it firms up just make small balls and place on a parchment covered cookie sheet. Then stick them in the freezer. All that's left to do is dip each ball in melted chocolate and roll in cocoa, or crushed nuts. This method can be used for plain or any basic flavored truffle. They have to be kept in the fridge! The best though, in my opinion, are the chocolate caramel truffles. Just melt a cup of sugar, add just under 2/3 cup of cream and stir until it re-liquefies.Add half a pound of chopped chocolate. Put this mixture in the fridge until firm. These balls get covered in melted chocolate and left to set on parchment. It's really a matter of choice as to whether they need to be put in the freezer first. If you find them difficult to manage, make them colder. These are amazing! So there it is, one of the yummiest chocolate creations is actually easier to make than a piece of cake!
  • Make Easy Money
    • Does this look like a lot of work? There were 37 other platters that I pushed out the door that week. In the middle is a turtle cake..mmm. Very popular! The trays were a mix of shortbreads, macaroons, coconut macaroons, brownies, turtle bites, turtles, truffles, assorted fondants, assorted types of fudge and rum balls..as well as other 'booze balls'! Truly, it just involved whipping up batches of each and dividing amongst the platters. Total money taken in from 41 of these platters? $1107.That's one week during the holiday season, and it's only the platters. Turtle cakes I sell for $12 each and they move, probably because even the grocery bakery would charge closer to $25.. I could do that, but then I'd lose the edge I have over them, and I'm already making an obscene profit!
  • Black and White Cheesecake (Pressure Cooker)
    • From Lorna Sass's book "The Pressured Cook". This recipe requires a 7-inch springform pan. It is a very rich, crustless, chocolate marbled cheesecake. Sometimes this cheesecake emerges from the pressure cooker looking "rustic" (with some peaks and valleys on top), but the flavor is dependably wonderful! This cheesecake will get firmer and denser when refrigerated overnight. For best flavor, bring to room temp before serving. This cheesecake freezes well. DO NOT SUBSTITUTE reduced fat products in this recipe, they contain more water and will not set up properly! Cooking Time includes 15 minutes for natural release. See NOTE for Lemon Cheesecake variation. -- posted by Dee514
