These a great for a party or picnic. They are so yummy and so easy. The bases can be made the day before and filled on the day. I use an Italian amaretti biscuit as the flavour seems more intense. I use slices of strawberries or whole raspberries on the tops, but any berry can be used. -- posted by Tisme

Does this look like a lot of work? There were 37 other platters that I pushed out the door that week. In the middle is a turtle cake..mmm. Very popular! The trays were a mix of shortbreads, macaroons, coconut macaroons, brownies, turtle bites, turtles, truffles, assorted fondants, assorted types of fudge and rum balls..as well as other 'booze balls'! Truly, it just involved whipping up batches of each and dividing amongst the platters. Total money taken in from 41 of these platters? $1107.That's one week during the holiday season, and it's only the platters. Turtle cakes I sell for $12 each and they move, probably because even the grocery bakery would charge closer to $25.. I could do that, but then I'd lose the edge I have over them, and I'm already making an obscene profit!
